Stir-fried Prawn with Longjing Tea is made of Longjing tea shoots and fresh prawn. Longjing tea is known for its green color, rich fragrance, smooth taste and elegant form. River prawn, said to be precious delicacy by ancient people, are not only tender and fresh, but also nutritious. With the combination both excellent ingredients, the dish oozes with the delicate color of white prawn and green tea shoots, coupled with a fresh, tender and smooth taste. It’s a must sought-after delicacy for tourists in Hangzhou.

Since the 1920s, Stir-fried Prawn with Longjing Tea has been a common dish in Hangzhou households. In 1930s, chefs in Changshu added it to the menu. In 1956, it was listed as a Famous Hangzhou Dish. In 1972, when President Nixon visited China, Premier Zhou Enlai held a banquet in Hangzhou, the menu of which included this dish.
