Braised Pork with Preserved Vegetables

Preserved Vegetables is a local specialty in Yongding County, Fujian Province. It has a history of over 400 years and is famous in Fujian and Southeast Asia.

Braised Pork with Preserved Vegetables is cooked with three layers of meat and Yongding preserved vegetables. The dish has a very rich fragrance and the meat is soft and tasty.

The making of preserved vegetables is very fastidious. Around the time of the Tomb Sweeping Festival, high quality vegetables which grow near the mountains and creeks are picked, peeled, washed, steamed and dried before being preserved. Then the vegetables are put into a jar with rice wine for three years. When it’s done, the vegetables are shiny brown and salty with a tender taste.
