Pian Er Chuan Noodles

Pian Er Chuan Noodles is a specialty of Kuiyuan Restaurant, which has a history of over 100 years. It is a Han delicacy in Hangzhou. In July of 2013, Hangzhou Pian Er Chuan ranked first in the Top 10 Noodles in China, which contributed Hangzhou cuisine’s popularity. The cooking technique of Pian Er Chuan in Kuiyuan Restaurant is different from that of other restaurants. Pork and bamboo are sliced into long and thin slices and then preserved vegetables are shredded into fine pieces. When lard melts, the pork enters the wok first followed by the bamboo. Soy sauce is added and stir fried before adding vegetable pieces and proper amount of boiled water. After being stirred and cooked for a while, the topping for the noodles is complete.

The soup of Pian Er Chuan Noodles is prepared with a dozen ingredients and cooked for 8 hours with a small flame to create a rich and layered taste. Pian Er Chuan Noodles are affordable and nutritious. It is one of the most popular local delicacies with citizens in Hangzhou.
