Ruyi Soup with Fried Tofu and Bean Sprouts

Ruyi Soup with Fried Tofu and Bean Sprouts is a famous Nanjing delicacy. Since bean sprouts are added while the dish is cooking, and bean sprouts resemble ancient jade ruyi, giving the dish its name.

Legend has it that after Emperor Zhu Yuanzhang took the throne, he saw a snack shop frying tofu and it smelled so good that his appetite was triggered. He gave the owner an ingot of silver to make some for him. The owner put fried tofu into chicken soup and cooked it with some bean sprouts and other ingredients. When the fried tofu became soft, he presented the dish to the emperor. Emperor Zhu Yuanzhang spoke highly of the dish afterwards, causing fried tofu to be popular from then on.
