Nanchang Fried Rice Noodles

Nanchang Fried Rice Noodles has a long-established reputation. The rice noodles used are white, smooth and tender, yet they remain resilient after being soaked for a long time and stay intact after being stir-fried for a long time. Nanchang fried rice noodles use ingredients like chopped ginger and garlic, sesame oil, soy sauce, lard, chopped green onion, and preserved veggies, along with the chili and pepper that the people of Nanchang enjoy. Fried rice noodles are a popular everyday food. To make fried rice noodles, the first step is to cook the rice noodles (white round noodles, made of rice milk) and then take them out and let them dry for hours (the drying time greatly affects the taste and hardness of the noodles), and finally stir-fry the rice noodles with some vegetables for a few minutes.
