Bee’s Tenderloin (Feng’er Liji)

Bee’s Tenderloin is a famous food in Xining, Qinghai, which was first invented by a chef named Zhang Youcheng in Xining. Its name refers to the buzzing sound made by the juices sizzling out of the meat when it is removed from the heat.

First the meatballs are made by mixing minced pork tenderloin and seasonings such as salt, ginger and pepper, after which the meatball is covered with egg white. Next it is fried slowly until cooked, and a soup containing MSG, sugar and vinegar is poured over. Sometimes a few drops of sesame oil are added before eating. It is extremely delicious, fat but not greasy and also good for your lungs and kidneys.
